This is a fast, easy, and healhy remake of the Egg McMuffin, and of course, it's delicious! The best part is that it takes less than 10 minutes to make, which is perfect for a rushed morning and why it's called a bun on the run! Here's how to make it:
Ingredients:
1 light whole grain Thomas' english muffin
1 egg
1 slice oven roasted deli turkey (Butterball, Boars Head, etc.)
1/2 slice all natural cheese (swiss, cheddar, or your preference)
pinch of pepper
Directions:
1. Heat pan on medium-high. While pan is heating up get out your english muffin and place in the toaster.
2. Once pan is warm, spray pan with Pam (or lightly butter) and crack egg into pan and cook the egg to your preference (runny yolk or a firm yolk). Add a pinch of pepper if you prefer.
3. After egg is done, take your toasted english muffin and stack the egg, cheese, and turkey inside....and voila! A quick, easy, and delicious breakfast on the go!
