BBQ’d Veggie Kabob

Barbecuing this weekend? Try this:
Slice up some eggplant, peppers (any kind you like), an onion (thick slices work best) and some mushrooms (or if you have small mushrooms leave them whole). Skewer the pieces on a kabob rod (you can get these at most any grocery store) and lightly brush with cooking oil. Then season with your choice of herbs and plop those healthy nutritious kabobs on the barbeque for about 20 minutes, until they are golden and tender. To keep things from getting too crispy, soak the kabob rods in water for a few hours before putting the veggies on. Makes a delicious and nutritious side dish for any summer occasion!
